Sample Recipe
Corn Salsa
2 cans shoe peg corn
1 can black beans (rinsed)
Onion (green)
1 red bell pepper
1 jalapeno pepper
1/3 c. rice wine vinegar
1 T. Dijon mustard
1 T. olive oil
2/3 c. chopped fresh cilantro
Tabasco, salt & pepper to taste
Pinch cayenne
Mix all above.
Refrigerate at least 2 hours
